Ingredients
- 2 tablespoons olive oil
- 1 medium onion chopped
- 4 russet potatoes peeled and cubed
- 8 cups chicken stock
- 1/2 cup heavy cream
- 2 tablespoons olive oiil
- 4 cloves garlic minced
- 1 large jalapeno seeded and chopped
- 16 ounces fresh spinach
- 1 large avocado sliced
- 2 tablespoons fresh tarragon
- salt and pepper
How To Make creamed spinach & potato soup with avocado

Step 1Add the two tbsp of oil oil to a large pot. Add the onions and saute for 5 minutes. Add the potatoes and chicken stock and bring to a boil. Reduce heat and simmer until potatoes are tender.

Step 2In the meantime add the oil to a skillet. Add the garlic and jalapeno and saute 5 minutes. Add the spinach and cook until wilted.

Step 3Add the heavy cream into the pot with the potatoes. and simmer 2 minutes. Stir in the spinach mixture. Simmer 2 more minutes. Stir in tha avocado and tarragon. Season with salt and pepper. Serve
