Healthier version for casseroles.
This can be varied by using veg. broth, sauteed celery, celery seed, chopped sauteed mushrooms, chicken or whatever you choose.

  • 1 Tbsp
  • 3 Tbsp
    all purpose flour
  • 1/2 c
    low sodium chicken broth
  • 1/2 c
    lowfat or skimmed milk
  • ·
    salt and pepper to taste

How to Make Cream Soup Substitute


  1. Melt Butter in saucepan over med. low heat
  2. Stir in flour, stirring until smooth and bubbly
  3. Remove from heat and add broth and milk stirring to keep smooth
  4. Return to heat, bring sauce to gentle boi stirring constantly, until it thickens
  5. Add salt and pepper to taste
