Ingredients

  • 6 tablespoons butter
  • 4 tablespoons flour
  • 4 cups milk
  • 2 cups chicken stock
  • 1 cup onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup green onions, finely chopped
  • 4 tablespoons cream

How To Make cream of vidalia onion soup

  • Step 1
    Melt 2 tablespoons of butter in top of double boiler; add flour and mix well.
  • Step 2
    Add milk and chicken stock; beat with wire whip to blend together and keep smooth.
  • Step 3
    Saute onions in 4 tablespoons of butter, 3 minutes.
  • Step 4
    Add to soup mixture and cook 15 minutes.
  • Step 5
    Add salt, pepper, green onions and cream; stir to blend and serve.
