Ingredients

  • 1 - onion, chopped
  • 2 - celery stalks, chopped
  • 1/4 cup butter
  • 3 tablespoons flour
  • 2 quarts chicken stock
  • 2 cups peanut butter, creamy
  • 1.75 cups light cream
  • - peanuts, chopped

How To Make cream of peanut soup

  • Step 1
    Saute onion and celery in butter until soft but not brown.
  • Step 2
    Stir in flour until well blended; add chicken broth, stirring constantly, bringing to a boil.
  • Step 3
    Remove from heat and put into blender and blend until smooth; then add peanut butter and cream.
  • Step 4
    Stir thoroughly then return to low heat, do not boil.
