  • 1 cup red wine
  • 1 gallon sliced mushrooms
  • 1 1/2 cups onion, finely diced
  • 1 pound butter
  • 1 pound flour
  • 1 1/2 gallons milk
  • 1/2 cup chicken base, diluted
  • 1 teaspoon white pepper
  • 1 tablespoon thyme
  • 3 quarts heavy cream

How To Make cream of mushroom soup

  • Step 1
    Saute until tender.
  • Step 2
    Make and add the roux.
  • Step 3
    Add milk, chicken base (diluted), white pepper, and thyme.
  • Step 4
    Bring to a near boil.
  • Step 5
    Add the 3 quarts of heavy cream.
