    red wine
  • 1 gal
    sliced mushrooms
  • 1 1/2 c
    onion, finely diced
  • 1 lb
  • 1 lb
  • 1 1/2 gal
  • 1/2 c
    chicken base, diluted
  • 1 tsp
    white pepper
  • 1 Tbsp
  • 3 qt
    heavy cream

How to Make Cream of Mushroom Soup


  1. Saute until tender.
  2. Make and add the roux.
  3. Add milk, chicken base (diluted), white pepper, and thyme.
  4. Bring to a near boil.
  5. Add the 3 quarts of heavy cream.
