Ingredients
- 2 tablespoons butter
- 2 tablespoons finely minced shallots
- 1 pound fresh mushrooms (i use the small white ones)
- 4 tablespoons flour
- 1 quart chicken broth
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
- 1 cup half & half
- 1/4 cup sherry
How To Make cream of mushroom soup

Step 1Melt butter in a 4 quart saucepan; add shallots and soften, add mushrooms and saute for 10 minutes, stirring constantly.

Step 2Stir in flour;mix well. Add broth, salt & pepper. Bring to a full boil; reduce heat and simmer partly covered 45 minutes. Stir a few times and do not let it stick to the pan.

Step 3Add the cream and mix well; remove from heat; stir in sherry and serve.
