finely minced shallots
fresh mushrooms (i use the small white ones)
freshly ground pepper
How to Make Cream of Mushroom Soup
1Melt butter in a 4 quart saucepan; add shallots and soften, add mushrooms and saute for 10 minutes, stirring constantly.
2Stir in flour;mix well. Add broth, salt & pepper.
Bring to a full boil; reduce heat and simmer partly covered 45 minutes. Stir a few times and do not let it stick to the pan.
3Add the cream and mix well; remove from heat; stir in sherry and serve.
