Ingredients

  • 2 tablespoons butter
  • 2 tablespoons finely minced shallots
  • 1 pound fresh mushrooms (i use the small white ones)
  • 4 tablespoons flour
  • 1 quart chicken broth
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup half & half
  • 1/4 cup sherry

How To Make cream of mushroom soup

  • Step 1
    Melt butter in a 4 quart saucepan; add shallots and soften, add mushrooms and saute for 10 minutes, stirring constantly.
  • Step 2
    Stir in flour;mix well. Add broth, salt & pepper. Bring to a full boil; reduce heat and simmer partly covered 45 minutes. Stir a few times and do not let it stick to the pan.
  • Step 3
    Add the cream and mix well; remove from heat; stir in sherry and serve.
