Ingredients

2 Tbsp
butter
2 Tbsp
finely minced shallots
1 lb
fresh mushrooms (i use the small white ones)
4 Tbsp
flour
1 qt
chicken broth
1 tsp
sea salt
1/2 tsp
freshly ground pepper
1 c
half & half
1/4 c
sherry

How to Make Cream of Mushroom Soup

Step-by-Step

  • 1Melt butter in a 4 quart saucepan; add shallots and soften, add mushrooms and saute for 10 minutes, stirring constantly.
  • 2Stir in flour;mix well. Add broth, salt & pepper.
    Bring to a full boil; reduce heat and simmer partly covered 45 minutes. Stir a few times and do not let it stick to the pan.
  • 3Add the cream and mix well; remove from heat; stir in sherry and serve.
