Ingredients

  • 2 Tbsp
    butter
  • 2 Tbsp
    finely minced shallots
  • 1 lb
    fresh mushrooms (i use the small white ones)
  • 4 Tbsp
    flour
  • 1 qt
    chicken broth
  • 1 tsp
    sea salt
  • 1/2 tsp
    freshly ground pepper
  • 1 c
    half & half
  • 1/4 c
    sherry

How to Make Cream of Mushroom Soup

Step-by-Step

  1. Melt butter in a 4 quart saucepan; add shallots and soften, add mushrooms and saute for 10 minutes, stirring constantly.
  2. Stir in flour;mix well. Add broth, salt & pepper.
    Bring to a full boil; reduce heat and simmer partly covered 45 minutes. Stir a few times and do not let it stick to the pan.
  3. Add the cream and mix well; remove from heat; stir in sherry and serve.
