Ingredients

  • 2 Tbsp
    butter
  • 1/4 c
    onion, sliced
  • 1
    celery stalk minced with leaves
  • 1.5 c
    chicken broth
  • 1 c
    cauliflower, cooked and coarsely mashed
  • 1 c
    light cream
  • pinch
    salt
  • pinch
    pepper
  • 1 Tbsp
    parsley, fresh and chopped
  • pinch
    nutmeg

How to Make Cream Of Cauliflower Soup

Step-by-Step

  1. Saute onion and celery in butter about 4 minutes.
  2. Add chicken broth and cauliflower and heat to boiling.
  3. Add cream, but do not let boil.
  4. Season to taste and stir in parsley and nutmeg.
