Ingredients

  • 2 tablespoons butter
  • 1/4 cup onion, sliced
  • 1 - celery stalk minced with leaves
  • 1.5 cups chicken broth
  • 1 cup cauliflower, cooked and coarsely mashed
  • 1 cup light cream
  • pinch salt
  • pinch pepper
  • 1 tablespoon parsley, fresh and chopped
  • pinch nutmeg

How To Make cream of cauliflower soup

  • Step 1
    Saute onion and celery in butter about 4 minutes.
  • Step 2
    Add chicken broth and cauliflower and heat to boiling.
  • Step 3
    Add cream, but do not let boil.
  • Step 4
    Season to taste and stir in parsley and nutmeg.
