Ingredients
- 2 tablespoons butter
- 1/4 cup onion, sliced
- 1 - celery stalk minced with leaves
- 1.5 cups chicken broth
- 1 cup cauliflower, cooked and coarsely mashed
- 1 cup light cream
- pinch salt
- pinch pepper
- 1 tablespoon parsley, fresh and chopped
- pinch nutmeg
How To Make cream of cauliflower soup

Step 1Saute onion and celery in butter about 4 minutes.

Step 2Add chicken broth and cauliflower and heat to boiling.

Step 3Add cream, but do not let boil.

Step 4Season to taste and stir in parsley and nutmeg.
