When I first made this soup, I had a hard time finding white cheddar. Now almost all the stores carry white cheddar! Also, I've tried doubling this recipe and it just doesn't taste the same, so make it a little batch at a time!

Ingredients

  • 1 box frozen chopped brocolli
  • 1 1/2 tablespoons margarine
  • 3 tablespoons finely chopped onion
  • 2 tablespoons flour
  • 2 1/2 cups milk
  • 1 teaspoon salt
  • 1 cup grated white cheddar tossed with 1 tsp. flour
  • a pinch cayenne pepper
  • 1/8 teaspoon nutmeg

How To Make cream of brocolli soup

  • Step 1
    Cook brocolli with onion and drain.
  • Step 2
    Melt butter and add 2 tbls. flour.
  • Step 3
    SLOWLY add milk and salt until smooth and boiling.
  • Step 4
    Add brocolli and grated cheese.
  • Step 5
    Bring to boil and season with cayenne and nutmeg.
  • Step 6
    Do it exactly in this order to keep it from curdling.
