When I first made this soup, I had a hard time finding white cheddar. Now almost all the stores carry white cheddar! Also, I've tried doubling this recipe and it just doesn't taste the same, so make it a little batch at a time!

frozen chopped brocolli
1 1/2 Tbsp
3 Tbsp
finely chopped onion
2 Tbsp
2 1/2 c
1 tsp
1 c
grated white cheddar tossed with 1 tsp. flour
a pinch
cayenne pepper
1/8 tsp

How to Make Cream of Brocolli Soup


  • 1Cook brocolli with onion and drain.
  • 2Melt butter and add 2 tbls. flour.
  • 3SLOWLY add milk and salt until smooth and boiling.
  • 4Add brocolli and grated cheese.
  • 5Bring to boil and season with cayenne and nutmeg.
  • 6Do it exactly in this order to keep it from curdling.
