When I first made this soup, I had a hard time finding white cheddar. Now almost all the stores carry white cheddar! Also, I've tried doubling this recipe and it just doesn't taste the same, so make it a little batch at a time!

  • 1 box
    frozen chopped brocolli
  • 1 1/2 Tbsp
  • 3 Tbsp
    finely chopped onion
  • 2 Tbsp
  • 2 1/2 c
  • 1 tsp
  • 1 c
    grated white cheddar tossed with 1 tsp. flour
  • a pinch
    cayenne pepper
  • 1/8 tsp

How to Make Cream of Brocolli Soup


  1. Cook brocolli with onion and drain.
  2. Melt butter and add 2 tbls. flour.
  3. SLOWLY add milk and salt until smooth and boiling.
  4. Add brocolli and grated cheese.
  5. Bring to boil and season with cayenne and nutmeg.
  6. Do it exactly in this order to keep it from curdling.
