cream of brocolli soup

When I first made this soup, I had a hard time finding white cheddar. Now almost all the stores carry white cheddar! Also, I've tried doubling this recipe and it just doesn't taste the same, so make it a little batch at a time!

Ingredients
- 1 box frozen chopped brocolli
- 1 1/2 tablespoons margarine
- 3 tablespoons finely chopped onion
- 2 tablespoons flour
- 2 1/2 cups milk
- 1 teaspoon salt
- 1 cup grated white cheddar tossed with 1 tsp. flour
- a pinch cayenne pepper
- 1/8 teaspoon nutmeg
How To Make cream of brocolli soup

Step 1Cook brocolli with onion and drain.

Step 2Melt butter and add 2 tbls. flour.

Step 3SLOWLY add milk and salt until smooth and boiling.

Step 4Add brocolli and grated cheese.

Step 5Bring to boil and season with cayenne and nutmeg.

Step 6Do it exactly in this order to keep it from curdling.
