cream of broccoli soup

I usally make this once a week. Fantastic soup!

Ingredients

  • 2 cups broccoli florets
  • 2 cups boiling water
  • 3 tablespoons butter
  • 1/4 cup all purpose flour
  • 2 teaspoons instant chicken bouillon granules
  • dash black pepper
  • 2 cups milk or half and half

How To Make cream of broccoli soup

  • Step 1
    In large suacepan cook broccoli in the boiling water for 8-10 minutes. Drain broccoli, reserving liquid.( Add additional water, if necessary, to make 1-1/2 cups liquid.)
  • Step 2
    In same pan melt butter. Stir flour, bouillon granules and pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more.
  • Step 3
    Stir in broccoli mixture; heat through.
  • Step 4
    185 calories and 8 grams carb
