How to Make Cream of Broccoli soup
- Cut brocooli in small pieces.. possible 1/2 inch pieces and boil in 1/2 cup of water until tender. Do not drain. Set aside for later use
- Melt butter in saucepan over medium heat. Add flour to make roux. Cook for about 3 minutes or so. Add chicken stock. Stir with a wisk and bring to boil. Reduce heat to low, careful not to burn.
- Add broccoli and water, half & half and spices. Adjust salt & pepper to taste. Heat to near boiling. Then serve.
