This is one O-so-good soup and so easy to make! I would have never ever thought I would like this soup, but I'm so glad I tried it! ...a great comfort soup!

Ingredients

  • 1 package frozen, chopped broccoli
  • 1 large onion, chopped
  • 1 tablespoon olive oil
  • 1 quart water
  • *1 quart left over chicken broth*
  • 1 pint heavy cream
  • - tiger seasoning and ground white pepper to taste
  • **F YOU HAVEN'T ANY CHICKEN BROTH, SUB 1 1/2 TBLSP OF 'BETTER THAN BOUILLON' CHICKEN BASE TO 4 CUPS OF WATER.

How To Make cream of broccoli soup

  • Step 1
    Saute the onion in olive oil in a heavy pot. Add the frozen, chopped broccoli and cook another 2 minutes. Add the water, bouillon(chicken broth) and seasonings. Bring to a boil, reduce heat to simmer and add the heavy cream. Total cooking time, 15 to 20 minutes. *May add a can of crab meat or cooked, cleaned shrimp for a seafood flavor and or a cup of cooked rice, if desired. If any of this is added, do so when adding the heavy cream.*
