Cream of Broccoli Soup
...a great comfort soup!
1 pkgfrozen, chopped broccoli
1 largeonion, chopped
1 Tbspolive oil
*1 qtleft over chicken broth*
1 ptheavy cream
·tiger seasoning and ground white pepper to taste
**F YOU HAVEN'T ANY CHICKEN BROTH, SUB 1 1/2 TBLSP OF 'BETTER THAN BOUILLON' CHICKEN BASE TO 4 CUPS OF WATER.
How to Make Cream of Broccoli Soup
- Saute the onion in olive oil in a heavy pot. Add the frozen, chopped broccoli and cook another 2 minutes. Add the water, bouillon(chicken broth) and seasonings. Bring to a boil, reduce heat to simmer and add the heavy cream.
Total cooking time, 15 to 20 minutes.
*May add a can of crab meat or cooked, cleaned shrimp for a seafood flavor and or a cup of cooked rice, if desired. If any of this is added, do so when adding the heavy cream.*
