Ingredients

  • 3 cups broccoli florets, coarsely cut and blanched
  • 1 small onion, finely chopped
  • 3 tablespoons butter or margarine
  • 3 tablespoons flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • - salt and pepper to taste

How To Make cream of broccoli soup

  • Step 1
    In a heavy saucepan, melt the butter or margarine. Add the blanched broccoli and the onions, cooking until onions are soft. Stir in flour, blending well, add chicken broth. Simmer ten minutes, then remove from heat, and blend in a blender (or use a hand blender) until smooth. Slowly add the cream. Add salt and pepper to taste. enjoy!
