I thought I had posted this recipe but could not find it. This is so good and easy to prepare. I fix it in the crockpot and we love it!!!

Ingredients

4 cups chicken broth
4 cups shredded hash brown potatoes
1/4 cup minced onions
1/4 cup shredded carrots
1 - bay leaf
1/2 teaspoon season salt
1/4 teaspoon pepper
8 ounces cream cheese

How To Make cream cheese potato soup

Step 1

Bring everything, except cream cheese, to a boil. Simmer 10 minutes. Add cream cheese; top with shredded cheese. I have taken this in a crock pot to many potlucks. It does very nicely in a crock pot.
