cold cucumber soup
This is my mom's recipe. I remember enjoying this in the summers, sitting in our screened porch in Minnesota. Great appetizer for lunch or dinner.

Ingredients
- 1 large cucumber
- 8 ounces sour cream
- 1 can cream of chicken soup
- 1/2 cup milk
How To Make cold cucumber soup

Step 1Peel and remove seeds from cucumber. Dice cucumber. In blender, blend until smooth.

Step 2Blend remaining ingredients. Salt and pepper to taste. Chill.

Step 3Serve in chilled mugs. Garnish with fresh dill. Great to serve on hot summer evening on patio before dinner.
