    leeks, finely chopped
  • 1/4 c
    onion, finely chopped
  • 1/4 c
    celery, finely chopped
  • 3
    cucumbers peeled and sliced
  • ·
  • 1/4 c
  • 2 c
    chicken stock
  • ·
    roux, see directions below
  • pinch
  • pinch
  • 1/2 tsp
    sesame seeds
  • 1/4 tsp
    dry mustard
  • 1/4 tsp
  • 1/4 tsp
  • 1 pt
    light cream
  • 1/4 c
    orange juice

How to Make Cold Cucumber Soup


  1. Saute the leeks, onions, celery, and cucumbers in butter.
  2. Add sherry, chicken stock and seasonings and let cook 20 minutes.
  3. Add roux* to thicken and then add light cream; cook 15 minutes and cool.
  4. Add the orange juice and serve cold.
  5. *Roux-Mixture of melted butter and flour used to thicken soups and sauces
