Ingredients

  • 1/4 cup leeks, finely chopped
  • 1/4 cup onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 3 - cucumbers peeled and sliced
  • - butter
  • 1/4 cup sherry
  • 2 cups chicken stock
  • - roux, see directions below
  • pinch salt
  • pinch pepper
  • 1/2 teaspoon sesame seeds
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon thyme
  • 1/4 teaspoon chervil
  • 1 pint light cream
  • 1/4 cup orange juice

How To Make cold cucumber soup

  • Step 1
    Saute the leeks, onions, celery, and cucumbers in butter.
  • Step 2
    Add sherry, chicken stock and seasonings and let cook 20 minutes.
  • Step 3
    Add roux* to thicken and then add light cream; cook 15 minutes and cool.
  • Step 4
    Add the orange juice and serve cold.
  • Step 5
    *Roux-Mixture of melted butter and flour used to thicken soups and sauces
