Ingredients

  • 1 large avocado
  • 1/2 cup half and half
  • 1.5 cups chicken broth, chilled
  • 1 tablespoon lemon juice

How To Make cold avocado soup

  • Step 1
    Pit and peel the avocado, then cut into chunks.
  • Step 2
    In a blender, whirl the avocado, half and half, broth and lemon juice until smooth.
  • Step 3
    To prepare in a food processor, whirl the avocado with the half and half until pureed then add the broth and lemon juice and whirl until smooth.
  • Step 4
    Ladle the soup into wide shallow bowls.
  • Step 5
    Garnish each portion with chives, if desired.
