My mothers potato soup recipe, sooo good! You can also use bacon instead of ham steak for deliciousness.

Ingredients
- 3-5 pounds red potatoes
- 2 cups water
- 1 - large onion chopped
- 3 tablespoons butter
- 3 tablespoons flour
- 3 cups milk
- 1 cup grated cheddar cheese
- 1 - ham steak cubed
- 1/2 teaspoon sugar
- - red pepper flakes to taste
- - extra cheddar cheese for on top :)
How To Make chunky potato soup

Step 1Peel potatoes and cut into 1 inch cubes. Bring water to a boil, add potatoes and cook until tender. Drain, reserving liquid. Set aside potatoes. Measure 1 cup cooking liquid. set aside.

Step 2Peel and finely chop onion and add to butter melting in saucepan over medium heat. Cook, stirring frequently, until onion is translucent and tender.

Step 3Add flour to saucepan, season with pepper flakes and black pepper. Cook 3-4 minutes or until browned. Gradually add potatoes, reserved cooking liquid, milk and sugar to onion mixture. Add cheese and ham. Simmer over low heat 30 minutes, stirring frequently.

Step 4Consume massive quantities and then lie on couch and groan with pleasure!
