My mothers potato soup recipe, sooo good! You can also use bacon instead of ham steak for deliciousness.

Ingredients

  • 3-5 pounds red potatoes
  • 2 cups water
  • 1 - large onion chopped
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3 cups milk
  • 1 cup grated cheddar cheese
  • 1 - ham steak cubed
  • 1/2 teaspoon sugar
  • - red pepper flakes to taste
  • - extra cheddar cheese for on top :)

How To Make chunky potato soup

  • Step 1
    Peel potatoes and cut into 1 inch cubes. Bring water to a boil, add potatoes and cook until tender. Drain, reserving liquid. Set aside potatoes. Measure 1 cup cooking liquid. set aside.
  • Step 2
    Peel and finely chop onion and add to butter melting in saucepan over medium heat. Cook, stirring frequently, until onion is translucent and tender.
  • Step 3
    Add flour to saucepan, season with pepper flakes and black pepper. Cook 3-4 minutes or until browned. Gradually add potatoes, reserved cooking liquid, milk and sugar to onion mixture. Add cheese and ham. Simmer over low heat 30 minutes, stirring frequently.
  • Step 4
    Consume massive quantities and then lie on couch and groan with pleasure!
