Ingredients
- 1 small cucumber, seeded and chopped
- 7 ounces corn, drained
- 1 - tomato, chopped
- 1 - jalapeno pepper, seeded, finely chopped
- 2 tablespoons cilantro, chopped
- 5/8 teaspoon cumin, ground
- 2 tablespoons lemon juice
- 2 - avocados, peeled, pitted and coarsely chopped
- 1.5 cups milk
- 1 cup chicken broth
How To Make chunky avocado soup

Step 1In 6 cup serving bowl place first 7 ingredients.

Step 2In food processor, process avocados, milk and broth until smooth; pour into bowl.

Step 3Press plastic wrap against top of soup; chill at least 2 hours.

Step 4Soup will discolor upon exposure to air.
