Ingredients

  • 2 c
    chicken broth
  • 3
    zucchinis, sliced
  • 2
    onions, chopped
  • 1 Tbsp
    basil, fresh chopped
  • 1
    garlic clove, thinly sliced
  • 1/2 c
    mayonnaise
  • 2 Tbsp
    lemon juice
  • tsp
    hot pepper sauce

How to Make Chilled Zucchini-Basil Soup

Step-by-Step

  1. In 3-quart saucepan combine chicken broth, zucchini, onions, basil and garlic; bring to boil over high heat.
  2. Reduce heat to low; cover and simmer 10 minutes or until zucchini is tender; cool.
  3. In blender or food processor container place zucchini mixture, half at a time; process until smooth.
  4. Pour into large bowl; stir in mayonnaise, lemon juice and hot pepper sauce until well blended.
  5. Cover; chill several hours or overnight.
