Ingredients

  • 2 cups chicken broth
  • 3 - zucchinis, sliced
  • 2 - onions, chopped
  • 1 tablespoon basil, fresh chopped
  • 1 - garlic clove, thinly sliced
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • teaspoon hot pepper sauce

How To Make chilled zucchini-basil soup

  • Step 1
    In 3-quart saucepan combine chicken broth, zucchini, onions, basil and garlic; bring to boil over high heat.
  • Step 2
    Reduce heat to low; cover and simmer 10 minutes or until zucchini is tender; cool.
  • Step 3
    In blender or food processor container place zucchini mixture, half at a time; process until smooth.
  • Step 4
    Pour into large bowl; stir in mayonnaise, lemon juice and hot pepper sauce until well blended.
  • Step 5
    Cover; chill several hours or overnight.
