Ingredients
- 2 cups chicken broth
- 3 - zucchinis, sliced
- 2 - onions, chopped
- 1 tablespoon basil, fresh chopped
- 1 - garlic clove, thinly sliced
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- teaspoon hot pepper sauce
How To Make chilled zucchini-basil soup

Step 1In 3-quart saucepan combine chicken broth, zucchini, onions, basil and garlic; bring to boil over high heat.

Step 2Reduce heat to low; cover and simmer 10 minutes or until zucchini is tender; cool.

Step 3In blender or food processor container place zucchini mixture, half at a time; process until smooth.

Step 4Pour into large bowl; stir in mayonnaise, lemon juice and hot pepper sauce until well blended.

Step 5Cover; chill several hours or overnight.
