Ingredients
- 2 pints fresh strawberries
- 1.5 teaspoons instant tapioca
- 1 cup orange juice
- 1 tablespoon lemon juice
- 1/4 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/2 cup sugar
- 1 teaspoon grated lemon rind
- 1 cup buttermilk
- 1 - lime, thinly sliced
- - strawberries, sliced
How To Make chilled strawberry soup

Step 1Process strawberries in blender or food processor until strawberries are pureed.

Step 2In medium saucepan, combine pureed strawberries, tapioca, orange juice, lemon juice, cinnamon and allspice.

Step 3Bring to a boil, stirring constantly with a wire whisk.

Step 4Reduce heat and simmer uncovered over moderate heat until mixture is thickened.

Step 5The time varies, it may take 1 hour.

Step 6Stir frequently.

Step 7Remove from heat.

Step 8Add sugar and stir until sugar dissolves.

Step 9Refrigerate mixture until well chilled.

Step 10Add lemon rind and buttermilk.

Step 11Mix well with wire whisk.

Step 12Serve soup garnished with lime slices and sliced strawberries.
