lemon juice
1/4 tsp

grated lemon rind
1 c
lime, thinly sliced
strawberries, sliced

How to Make Chilled Strawberry Soup


  • 1Process strawberries in blender or food processor until strawberries are pureed.
  • 2In medium saucepan, combine pureed strawberries, tapioca, orange juice, lemon juice, cinnamon and allspice.
  • 3Bring to a boil, stirring constantly with a wire whisk.
  • 4Reduce heat and simmer uncovered over moderate heat until mixture is thickened.
  • 5The time varies, it may take 1 hour.
  • 6Stir frequently.
  • 7Remove from heat.
  • 8Add sugar and stir until sugar dissolves.
  • 9Refrigerate mixture until well chilled.
  • 10Add lemon rind and buttermilk.
  • 11Mix well with wire whisk.
  • 12Serve soup garnished with lime slices and sliced strawberries.
