Ingredients

  • 1.5 cups chicken broth
  • 1/2 cup onion, chopped
  • 2 cups broccoli
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • - "just a pinch" of pepper
  • 1 cup milk
  • 1/2 teaspoon dried thyme, crushed
  • 1 small bay leaf
  • 1/4 teaspoon garlic powder

How To Make chilled creamed broccoli soup

  • Step 1
    In saucepan combine broth, onion, broccoli, thyme, bay leaf and garlic powder; bring to a boil.
  • Step 2
    Reduce heat; cover and simmer 10 minutes or until broccoli is tender, then remove bay leaf.
  • Step 3
    Place vegetable mixture in blender or food processor; cover and blend 30 to 60 seconds or until smooth.
  • Step 4
    In same saucepan melt butter; blend in flour, salt and pepper.
  • Step 5
    Add the milk at once.
  • Step 6
    Cook and stir until thickened and bubbly; stir in vegetable puree.
  • Step 7
    Cook until heated through for a warm soup.
  • Step 8
    Refrigerate, covered, for several hours for chilled soup.
