  • 1.5 c
    chicken broth
  • 1/2 c
    onion, chopped
  • 2 c
  • 2 Tbsp
  • 2 Tbsp
  • 1/2 tsp
  • ·
    "just a pinch" of pepper
  • 1 c
  • 1/2 tsp
    dried thyme, crushed
  • 1 small
    bay leaf
  • 1/4 tsp
    garlic powder

How to Make Chilled Creamed Broccoli Soup


  1. In saucepan combine broth, onion, broccoli, thyme, bay leaf and garlic powder; bring to a boil.
  2. Reduce heat; cover and simmer 10 minutes or until broccoli is tender, then remove bay leaf.
  3. Place vegetable mixture in blender or food processor; cover and blend 30 to 60 seconds or until smooth.
  4. In same saucepan melt butter; blend in flour, salt and pepper.
  5. Add the milk at once.
  6. Cook and stir until thickened and bubbly; stir in vegetable puree.
  7. Cook until heated through for a warm soup.
  8. Refrigerate, covered, for several hours for chilled soup.
