Ingredients
- 1.5 cups chicken broth
- 1/2 cup onion, chopped
- 2 cups broccoli
- 2 tablespoons butter
- 2 tablespoons flour
- 1/2 teaspoon salt
- - "just a pinch" of pepper
- 1 cup milk
- 1/2 teaspoon dried thyme, crushed
- 1 small bay leaf
- 1/4 teaspoon garlic powder
How To Make chilled creamed broccoli soup

Step 1In saucepan combine broth, onion, broccoli, thyme, bay leaf and garlic powder; bring to a boil.

Step 2Reduce heat; cover and simmer 10 minutes or until broccoli is tender, then remove bay leaf.

Step 3Place vegetable mixture in blender or food processor; cover and blend 30 to 60 seconds or until smooth.

Step 4In same saucepan melt butter; blend in flour, salt and pepper.

Step 5Add the milk at once.

Step 6Cook and stir until thickened and bubbly; stir in vegetable puree.

Step 7Cook until heated through for a warm soup.

Step 8Refrigerate, covered, for several hours for chilled soup.
