Its soup season! What can I say; an awesome quick and easy recipe in my pressure cooker. Can't beat the wonderful flavor! We just love it!!

Ingredients For chicken wild rice soup in instant pot

  • 1 1/2 lb
    chicken breast (uncooked)cut into bite size pieces
  • 1 c
    diced celery
  • 1 c
    grated or diced carrot
  • 6 c
    water
  • 4 Tbsp
    better than bouillon chicken base
  • 1/2 c
    wild rice (uncooked)
  • 1/2 c
    brown rice (uncooked)
  • 1 tsp
    black pepper
  • 1 1/2 tsp
    salt
  • 1 Tbsp
    dried parsley
  • 1 tsp
    garlic powder
  • 1/4 tsp
    sugar
  • 1/2 tsp
    thyme (optional)
  • 1/4 c
    butter
  • 1/2 c
    flour
  • 2 c
    half & half

How To Make chicken wild rice soup in instant pot

    Place chicken, celery, carrots, water, bouillon, rice, pepper, salt, parsley, sugar, garlic powder, and thyme into the pressure cooker.

    Lock on lid. Be sure valve is set to sealing. Pressure cook for 25 minutes.

    Let pressure release for 10 minutes naturally. Then open valve to release rest of pressure.

    Melt butter in microwave, stir in flour a tablespoon at a time. Ladle in a cup of the soup broth and stir until creamy.

    Turn pressure cooker to 'saute' and add the flour mixture to soup stirring as it starts to thicken. As it thickens, add in the half and half.
