Its soup season! What can I say; an awesome quick and easy recipe in my pressure cooker. Can't beat the wonderful flavor! We just love it!!

Ingredients

  • 1 1/2 pounds chicken breast (uncooked)cut into bite size pieces
  • 1 cup diced celery
  • 1 cup grated or diced carrot
  • 6 cups water
  • 4 tablespoons better than bouillon chicken base
  • 1/2 cup wild rice (uncooked)
  • 1/2 cup brown rice (uncooked)
  • 1 teaspoon black pepper
  • 1 1/2 teaspoons salt
  • 1 tablespoon dried parsley
  • 1 teaspoon garlic powder
  • 1/4 teaspoon sugar
  • 1/2 teaspoon thyme (optional)
  • 1/4 cup butter
  • 1/2 cup flour
  • 2 cups half & half

How To Make chicken wild rice soup in instant pot

  • Step 1
    Place chicken, celery, carrots, water, bouillon, rice, pepper, salt, parsley, sugar, garlic powder, and thyme into the pressure cooker.
  • Step 2
    Lock on lid. Be sure valve is set to sealing. Pressure cook for 25 minutes.
  • Step 3
    Let pressure release for 10 minutes naturally. Then open valve to release rest of pressure.
  • Step 4
    Melt butter in microwave, stir in flour a tablespoon at a time. Ladle in a cup of the soup broth and stir until creamy.
  • Step 5
    Turn pressure cooker to 'saute' and add the flour mixture to soup stirring as it starts to thicken. As it thickens, add in the half and half.
  • Step 6
    Enjoy!
