We love this soup.We think this is very much like Bob Evens .Sometimes we top it with green onion tops chopped up right before we eat it.

Ingredients

  • 4slices - bacon
  • 1 1/2 cups chopped onion
  • 5 cups diced peeled potato(about5)
  • 1 medium celery stalk chopped
  • 1 box chicken broth(4cups)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup all purpose flour
  • 1 1/2 cups half and half
  • 1(8) cup cheese, shredded american/cheddar blend

How To Make cheesy potato soup

  • Step 1
    1.In 12 inch skillet cook bacon over medium heat turning occasionally, until done.Remove and drain bacon on paper towel ,then refrigerate.In same skillet fry onion in bacon fat over medium heat until tender.
  • Step 2
    2.Spray31/2 to 4 quart slow cooker with cooking spray.In cooker ,mix onion,potatoes,celery,broth,salt,and pepper.

    3.Cover:cook on low heat setting 6 to 7 hours
  • Step 4
    4.In a small bowl ,beat flour and half and half with wire wisk until well blended :stir into soup.Increase to High ,cover,cook about 30 minutes or until thick.Stir in cheese right before serveing .Crumble bacon ; sprinkle over soup.
