Ingredients
- 1 pound fresh mushrooms diced
- 6 sticks butter
- 1 large onion diced
- 1 teaspoon sugar
- 4 cloves garlic minced
- 1/4 cup flour
- 1 cup water
- 2 cups chicken stock
- 1 cup dry vermouth
- 1 cup shredded cheese your choice i used beemsters valaska
- - salt and pepper to taste
- - fresh thyme for garnish
How To Make cheesy fresh mushroom soup

Step 1Melt the butter in a large pot. Saute the onions with the sugar until golden brown. Add the mushrooms and garlic and cook until mushrooms loose their moisture and become browned. Stir in the flour then add the one cup of water. Stir until smooth. Add the chicken stock and vermouth.

Step 2Cook for 10 minutes, Stir in the shredded cheese and cook 5 minutes until cheese is melted. Season with salt and pepper and garnish with fresh thyme.
