Cheesy Broccoli Soup
This recipe makes 4 quarts and freezes very well.

2 cdiced potatoes
1 cdiced onion
2chicken bouillon cubes
1 bunchfresh broccoli
1 lbvelveeta cheese
2 can(s)cream of chicken soup
·salt and pepper to taste
How to Make Cheesy Broccoli Soup
- Fill large stock pot with water and bouillon cubes. Wash and cut broccoli, potatoes and onion. Add to pot and boil for 1/2 hour or until potatoes are soft.
Turn stove top burner to low.
- Add 1 pound of Velveeta cheese by cutting it into chunks and adding and stirring a little at a time to the pot.
- Add two cans of cream of chicken soup and boil for 20- 20 minutes longer. Stir frequently until soup has thickened. Be sure to stir to the bottom of the pot to avoid burning.
