This creamy, cheesy broccoli soup is a favorite of my two kids. There is so much cheese in it..they hardly ever realize they are eating vegetables. This recipe makes 4 quarts and freezes very well.

Ingredients
- 6 cups water
- 2 cups diced potatoes
- 1 cup diced onion
- 2 - chicken bouillon cubes
- 1 bunch fresh broccoli
- 1 pound velveeta cheese
- 2 cans cream of chicken soup
- - salt and pepper to taste
How To Make cheesy broccoli soup

Step 1Fill large stock pot with water and bouillon cubes. Wash and cut broccoli, potatoes and onion. Add to pot and boil for 1/2 hour or until potatoes are soft. Turn stove top burner to low.

Step 2Add 1 pound of Velveeta cheese by cutting it into chunks and adding and stirring a little at a time to the pot.

Step 3Add two cans of cream of chicken soup and boil for 20- 20 minutes longer. Stir frequently until soup has thickened. Be sure to stir to the bottom of the pot to avoid burning.
