Ingredients

  • 3/4 cup finely chopped carrots
  • 2/3 cup finely chopped celery
  • 1/3 cup finely chopped green onion
  • 1/4 cup melted butter or oleo
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups half & half (or canned milk)
  • 1/4 teaspoon salt
  • 1 1/2 cups shredded sharp Cheddar cheese
  • 1 tablespoon Brandy (optional)
  • - Chopped fresh parsley

How To Make cheese soup

  • Step 1
    In your soup pot, saute vegetables in butter until soft but not brown; blend in flour.
  • Step 2
    Gradually stir in broth, then half & half.
  • Step 3
    Cook, stirring constantly to keep from sticking to bottom of pan, until mixture thickens and boils.
  • Step 4
    Stir in salt, cheese and Brandy (optional). Heat until cheese melts.
  • Step 5
    Sprinkle with parsley.
