Ingredients

  • 3/4 c
    finely chopped carrots
  • 2/3 c
    finely chopped celery
  • 1/3 c
    finely chopped green onion
  • 1/4 c
    melted butter or oleo
  • 1/3 c
    all-purpose flour
  • 2 c
    chicken broth
  • 2 c
    half & half (or canned milk)
  • 1/4 tsp
    salt
  • 1 1/2 c
    shredded sharp Cheddar cheese
  • 1 Tbsp
    Brandy (optional)
  • ·
    Chopped fresh parsley

How to Make Cheese Soup

Step-by-Step

  1. In your soup pot, saute vegetables in butter until soft but not brown; blend in flour.
  2. Gradually stir in broth, then half & half.
  3. Cook, stirring constantly to keep from sticking to bottom of pan, until mixture thickens and boils.
  4. Stir in salt, cheese and Brandy (optional). Heat until cheese melts.
  5. Sprinkle with parsley.
