Ingredients
- 3/4 cup finely chopped carrots
- 2/3 cup finely chopped celery
- 1/3 cup finely chopped green onion
- 1/4 cup melted butter or oleo
- 1/3 cup all-purpose flour
- 2 cups chicken broth
- 2 cups half & half (or canned milk)
- 1/4 teaspoon salt
- 1 1/2 cups shredded sharp Cheddar cheese
- 1 tablespoon Brandy (optional)
- - Chopped fresh parsley
How To Make cheese soup

Step 1In your soup pot, saute vegetables in butter until soft but not brown; blend in flour.

Step 2Gradually stir in broth, then half & half.

Step 3Cook, stirring constantly to keep from sticking to bottom of pan, until mixture thickens and boils.

Step 4Stir in salt, cheese and Brandy (optional). Heat until cheese melts.

Step 5Sprinkle with parsley.
