3/4 c
finely chopped carrots
2/3 c
finely chopped celery
1/3 c
finely chopped green onion
1/4 c
melted butter or oleo
1/3 c
all-purpose flour
2 c
chicken broth
2 c
half & half (or canned milk)
1/4 tsp
1 1/2 c
shredded sharp Cheddar cheese
1 Tbsp
Brandy (optional)
Chopped fresh parsley

How to Make Cheese Soup


  • 1In your soup pot, saute vegetables in butter until soft but not brown; blend in flour.
  • 2Gradually stir in broth, then half & half.
  • 3Cook, stirring constantly to keep from sticking to bottom of pan, until mixture thickens and boils.
  • 4Stir in salt, cheese and Brandy (optional). Heat until cheese melts.
  • 5Sprinkle with parsley.
