Ingredients
- 3 tablespoons butter, unsalted
- 3 cups carrots, grated
- 3 - celery stalks, chopped
- 3 - green onions, chopped white and green parts
- 2 14.5 ounces cans low sodium chicken broth
- 2 10 3/4 ounces cans cream of potatoe soup
- 1 cup milk
- 1 cup sour cream
- 1 pound processed cheese food such as kraft's old english cheese

Step 1In a large saucepan over medium high heat, melt butter and saute carrots, celery and onions. Add chicken broth and simmer for 30 min. Add potato soup, milk, sour cream, and cheese. Heat until cheese melts.
