Ingredients
- 2 tablespoons olive oil
- 1 medium onion chopped
- 1 tablespoon flour
- 1 1/2 cups half and half
- 1 cup chicken stock
- 1 medium head of cauliflower cut into small florets
- 6 ounces gorgonzola cheese cubed or crumbled
- 2 teaspoons whole grain mustard
- salt and pepper to taste
How To Make cauliflower & gorgonzola soup

Step 1Place oil in a pot and add the onion and saute until softened. Do not let it get dark. Add the flour and cook 1 minute. Add the half and half and chicken stock stirring constantly and bring to a boil

Step 2Add the cauliflower and simmer for 20 minutes until the cauliflower is very tender. Add the Gorgonzola and let it melt.

Step 3Puree in a food processor until smooth. Return to the pan and add the mustard. Taste and adjust for seasoning and serve.
