vegetable broth

How to Make Carrot Soup

Step-by-Step

  • 1In larger saucepan melt butter and add carrots. Gently saute carrots and ginger.
  • 2Add vegetable broth and cook until carrots are softened, about 25 minutes.
  • 3Pour mixture into a food processor and puree.
  • 4Season with salt and pepper and add the juice and zest of the orange.
  • 5Serve hot or cold.
