Ingredients

  • 1 tablespoon butter
  • 2 pounds carrots, peeled and chunked
  • 1 ginger, 2x1" piece cut into matchsticks
  • 3 cups vegetable broth
  • pinch salt
  • pinch pepper
  • 1 orange

How To Make carrot soup

  • Step 1
    In larger saucepan melt butter and add carrots. Gently saute carrots and ginger.
  • Step 2
    Add vegetable broth and cook until carrots are softened, about 25 minutes.
  • Step 3
    Pour mixture into a food processor and puree.
  • Step 4
    Season with salt and pepper and add the juice and zest of the orange.
  • Step 5
    Serve hot or cold.
