Ingredients
- 1 tablespoon butter
- 2 pounds carrots, peeled and chunked
- 1 ginger, 2x1" piece cut into matchsticks
- 3 cups vegetable broth
- pinch salt
- pinch pepper
- 1 orange
How To Make carrot soup

Step 1In larger saucepan melt butter and add carrots. Gently saute carrots and ginger.

Step 2Add vegetable broth and cook until carrots are softened, about 25 minutes.

Step 3Pour mixture into a food processor and puree.

Step 4Season with salt and pepper and add the juice and zest of the orange.

Step 5Serve hot or cold.
