bacon, chopped
1 lb
carrots, peeled and chopped
green onions, chopped
1 c
mushrooms, chopped
celery ribs, chopped
sprigs fresh thyme
bay leaf
4 c
chicken broth
1 c
1 c
heavy cream
"just a pinch" of salt
"just a pinch" of pepper

How to Make Carrot Bisque


  • 1In a stock pot over medium-high heat, saute bacon until crisp.
  • 2Add carrots, green onions, mushrooms, and celery; Cook, uncovered, for 5 minutes.
  • 3Add thyme, bay leaf, chicken broth, and water, bring to a boil; Reduce heat, cover and simmer for 50 minutes.
  • 4Remove bay leaf; Place soup in a food processor and process until smooth.
  • 5Return mixture to pot over low heat; Add cream and salt and pepper to taste.
  • 6Heat until warm.
