Ingredients

  • 5 slice
    bacon, chopped
  • 1 lb
    carrots, peeled and chopped
  • 6
    green onions, chopped
  • 1 c
    mushrooms, chopped
  • 3
    celery ribs, chopped
  • 2
    sprigs fresh thyme
  • 1
    bay leaf
  • 4 c
    chicken broth
  • 1 c
    water
  • 1 c
    heavy cream
  • ·
    "just a pinch" of salt
  • ·
    "just a pinch" of pepper

How to Make Carrot Bisque

Step-by-Step

  1. In a stock pot over medium-high heat, saute bacon until crisp.
  2. Add carrots, green onions, mushrooms, and celery; Cook, uncovered, for 5 minutes.
  3. Add thyme, bay leaf, chicken broth, and water, bring to a boil; Reduce heat, cover and simmer for 50 minutes.
  4. Remove bay leaf; Place soup in a food processor and process until smooth.
  5. Return mixture to pot over low heat; Add cream and salt and pepper to taste.
  6. Heat until warm.
