This recipe is from a restaurant in Columbia Missouri when I was in college in the early 80's. I'm sure it is no longer in business, but this soup recipe lives on.

Ingredients
- 1 bunch fresh broccoli, including stems, chopped
- 1/2 cup butter
- 1/2 cup + 2 T. flour
- 2 quarts milk
- 3 cups grated cheddar cheese
- 1/2 teaspoon sweet basil
- 1/2 teaspoon tarragon
- - Salt & pepper to taste
How To Make cari's broccoli cheese soup

Step 1Cover broccoli with water in saucepan & bring to gentle boil. Cook until just tender & drain. Set aside. Melt butter in saucepan over low heat. Add flour & whisk thoroughly. Cook & whisk over low heat 5-6 minutes. Add milk & whisk thoroughly. Increase heat to medium & cook, whisking frequently until mixture has reached a low boil. Reduce heat to simmer. Add cheese & stir until melted. Add seasoning & broccoli. Heat thoroughly & serve.
