  • 1/2 c
    onion, finely chopped
  • 1.5 Tbsp
    ginger, finely chopped
  • 3 Tbsp
    butter, unsalted
  • 2 large
    butternut squash, peeled and sliced
  • 2 c
    chicken broth
  • 2 c
  • 3
    garlic cloves
  • 2 Tbsp
    lime juice
  • 1/3 c
  • 3 Tbsp
    ginger, julienned

How to Make Butternut Squash Soup with Ginger and Lime


  1. In a large saucepan, cook the onion and minced ginger in the butter over low heat until onion is soft.
  2. Add squash, broth, 2 cups water and the garlic; Bring mixture to a boil and simmer covered for 15-20 minutes or until squash is tender.
  3. Puree mixture in batches in a blender or food processor and then return to the pan.
  4. Stir in lime juice, season with salt and pepper and reheat soup.
  5. In a small skillet, heat the oil over moderately high heat until it is hot and fry julienned ginger.
  6. Sprinkle the fried ginger.
