Ingredients
- 1/2 cup onion, finely chopped
- 1.5 tablespoons ginger, finely chopped
- 3 tablespoons butter, unsalted
- 2 large butternut squash, peeled and sliced
- 2 cups chicken broth
- 2 cups water
- 3 - garlic cloves
- 2 tablespoons lime juice
- 1/3 cup oil
- 3 tablespoons ginger, julienned
How To Make butternut squash soup with ginger and lime

Step 1In a large saucepan, cook the onion and minced ginger in the butter over low heat until onion is soft.

Step 2Add squash, broth, 2 cups water and the garlic; Bring mixture to a boil and simmer covered for 15-20 minutes or until squash is tender.

Step 3Puree mixture in batches in a blender or food processor and then return to the pan.

Step 4Stir in lime juice, season with salt and pepper and reheat soup.

Step 5In a small skillet, heat the oil over moderately high heat until it is hot and fry julienned ginger.

Step 6Sprinkle the fried ginger.
