Brownwood restaurant in Torch Lake was famous for their homemade soups. Unfortunately, they are no longer open. This was one of our favorite soups that they made.

Ingredients

  • 3 bunch
    broccoli
  • 2 lb
    ham, chunked or bite size pieces
  • 2 medium
    onions, chopped
  • 1 qt
    cream
  • 1 gal
    chicken stock
  • 1 c
    oil
  • 1 c
    flour
  • ·
    salt & white pepper
  • 1/2 c
    parmesan cheese
  • 1/2 c
    parsley flakes

How to Make Brownwoods Cream of Broccoli Soup

Step-by-Step

  1. Combine chopped broccoli with chicken stock & boil until tender.
    In sauce pan, saute ham & onions until onions are transparent. Add ham & onions to soup.
  2. In another sauce pan, heat oil & add flour, whisking constantly, until a medium paste is prepared (roux).
  3. Add cream to soup. Add roux to soup, stirring continuously until desired thickness is reached.
    While stirring, add 1/2 cup Parmesan cheese.
    Add spices to taste & parsley to garnish.
