Brownwood restaurant in Torch Lake was famous for their homemade soups. Unfortunately, they are no longer open. This was one of our favorite soups that they made.

Ingredients

  • 3 bunches broccoli
  • 2 pounds ham, chunked or bite size pieces
  • 2 medium onions, chopped
  • 1 quart cream
  • 1 gallon chicken stock
  • 1 cup oil
  • 1 cup flour
  • - salt & white pepper
  • 1/2 cup parmesan cheese
  • 1/2 cup parsley flakes

How To Make brownwoods cream of broccoli soup

  • Step 1
    Combine chopped broccoli with chicken stock & boil until tender. In sauce pan, saute ham & onions until onions are transparent. Add ham & onions to soup.
  • Step 2
    In another sauce pan, heat oil & add flour, whisking constantly, until a medium paste is prepared (roux).
  • Step 3
    Add cream to soup. Add roux to soup, stirring continuously until desired thickness is reached. While stirring, add 1/2 cup Parmesan cheese. Add spices to taste & parsley to garnish.
