I found this excellent soup on Allrecipes, but I can never leave well enough alone. I don't even always follow my own recipes. So here is my version of broccoli cheese soup.

Ingredients

  • 4 cups broccoli florets, bite-size
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 3 cups chicken broth
  • 3 cups milk
  • 1/2 teaspoon white or black pepper (your choice)
  • 1/4 - 1/2 teaspoon salt
  • 1 pound American or Velveeta cheese
  • 2+ cups shredded cheddar cheese

How To Make broccoli cheese soup

  • Step 1
    Bring a pot of lightly salted water to a boil. Carefully place broccoli in the boiling water (so as not to splash the boiling water), and cook for 2 minutes. Remove from heat, drain, and set aside.
  • Step 2
    Melt the butter in a large pot over medium heat, and mix in the flour. Reduce heat to medium-low, and cook, stirring constantly, for 5-7 minutes.
  • Step 3
    Mix in the chicken stock and milk. Increase the heat to medium-high, and season with salt and pepper. Bring to a boil, reduce the heat, and simmer about 10 minutes, stirring occasionally.
  • Step 4
    Gradually mix in the processed cheese and cheddar cheese until melted.
  • Step 5
    Mix in the broccoli. Continue cooking for another 5-10 minutes, or until broccoli is heated through.
