broccoli cheese soup
I found this excellent soup on Allrecipes, but I can never leave well enough alone. I don't even always follow my own recipes. So here is my version of broccoli cheese soup.

Ingredients
- 4 cups broccoli florets, bite-size
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 3 cups chicken broth
- 3 cups milk
- 1/2 teaspoon white or black pepper (your choice)
- 1/4 - 1/2 teaspoon salt
- 1 pound American or Velveeta cheese
- 2+ cups shredded cheddar cheese
How To Make broccoli cheese soup

Step 1Bring a pot of lightly salted water to a boil. Carefully place broccoli in the boiling water (so as not to splash the boiling water), and cook for 2 minutes. Remove from heat, drain, and set aside.

Step 2Melt the butter in a large pot over medium heat, and mix in the flour. Reduce heat to medium-low, and cook, stirring constantly, for 5-7 minutes.

Step 3Mix in the chicken stock and milk. Increase the heat to medium-high, and season with salt and pepper. Bring to a boil, reduce the heat, and simmer about 10 minutes, stirring occasionally.

Step 4Gradually mix in the processed cheese and cheddar cheese until melted.

Step 5Mix in the broccoli. Continue cooking for another 5-10 minutes, or until broccoli is heated through.
