Broccoli Beer Cheese Soup
beef bouillon granules
cheddar cheese, cubed
1Bring water and onion to a boil in a large soup pot.
2Add seasonings and half of the broccoli.
4Add soup base and lower heat.
5In a separate saucepan, make a roux.
6When the roux thickens, gradually stir into the soup, whipping with a wire whisk to avoid lumps.
7Heat milk and cheese to just below boiling point until the cheese melts, stirring constantly.
8Blend into the soup and add the remaining broccoli.
9Just before serving, add beer.
