Ingredients

  • 4 cups water
  • 1 small onion, chopped
  • 1 pound broccoli, fresh
  • 1 ounce beef bouillon granules
  • 3/4 cup butter
  • 1.5 cups flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon white pepper
  • - seasoned salt, to taste
  • - cayenne, to taste
  • 2 pounds cheddar cheese, cubed
  • 4 cups milk
  • 2 ounces beer

How To Make broccoli beer cheese soup

  • Step 1
    Bring water and onion to a boil in a large soup pot.
  • Step 2
    Add seasonings and half of the broccoli.
  • Step 3
    Bring to a boil again.
  • Step 4
    Add soup base and lower heat.
  • Step 5
    In a separate saucepan, make a roux.
  • Step 6
    When the roux thickens, gradually stir into the soup, whipping with a wire whisk to avoid lumps.
  • Step 7
    Heat milk and cheese to just below boiling point until the cheese melts, stirring constantly.
  • Step 8
    Blend into the soup and add the remaining broccoli.
  • Step 9
    Just before serving, add beer.
  • Step 10
    Mix well.
