Ingredients
- 4 cups water
- 1 small onion, chopped
- 1 pound broccoli, fresh
- 1 ounce beef bouillon granules
- 3/4 cup butter
- 1.5 cups flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon white pepper
- - seasoned salt, to taste
- - cayenne, to taste
- 2 pounds cheddar cheese, cubed
- 4 cups milk
- 2 ounces beer
How To Make broccoli beer cheese soup

Step 1Bring water and onion to a boil in a large soup pot.

Step 2Add seasonings and half of the broccoli.

Step 3Bring to a boil again.

Step 4Add soup base and lower heat.

Step 5In a separate saucepan, make a roux.

Step 6When the roux thickens, gradually stir into the soup, whipping with a wire whisk to avoid lumps.

Step 7Heat milk and cheese to just below boiling point until the cheese melts, stirring constantly.

Step 8Blend into the soup and add the remaining broccoli.

Step 9Just before serving, add beer.

Step 10Mix well.
