Ingredients

  • 1 tablespoon olive oil
  • 2 cups broccoli, fresh stalks, peeled and diced
  • 3/4 teaspoon dried thyme, crushed
  • 1 cup onion, thinly sliced
  • 1 cup red apple, cooking-type, peeled and diced
  • 1/2 cup celery ribs, diced
  • 4 cups chicken stock, light
  • 1/4 teaspoon white pepper
  • 1/4 cup yogurt, low-fat, plain
  • 2 tablespoons parsley, minced

How To Make broccoli apple soup

  • Step 1
    Heat oil in large pot with lid; Add broccoli, thyme, onion, apple and celery.
  • Step 2
    Cover and cook over low heat 10 minutes.
  • Step 3
    Add chicken stock and pepper; Cook 30 minutes more.
  • Step 4
    Remove from heat and cool slightly.
  • Step 5
    Puree 1 cup at a time in blender or food processor.
  • Step 6
    Serve hot or chilled, garnished with a dollop of yogurt and sprinkling of minced parsley - Makes 5 1/2 cups.
