Ingredients
- 1 tablespoon olive oil
- 2 cups broccoli, fresh stalks, peeled and diced
- 3/4 teaspoon dried thyme, crushed
- 1 cup onion, thinly sliced
- 1 cup red apple, cooking-type, peeled and diced
- 1/2 cup celery ribs, diced
- 4 cups chicken stock, light
- 1/4 teaspoon white pepper
- 1/4 cup yogurt, low-fat, plain
- 2 tablespoons parsley, minced
How To Make broccoli apple soup

Step 1Heat oil in large pot with lid; Add broccoli, thyme, onion, apple and celery.

Step 2Cover and cook over low heat 10 minutes.

Step 3Add chicken stock and pepper; Cook 30 minutes more.

Step 4Remove from heat and cool slightly.

Step 5Puree 1 cup at a time in blender or food processor.

Step 6Serve hot or chilled, garnished with a dollop of yogurt and sprinkling of minced parsley - Makes 5 1/2 cups.
