Ingredients

  • 1/2 c
    water
  • 2 tsp
    beef bouillon granules
  • 10 oz
    frozen broccoli, chopped
  • 1 c
    milk
  • 1 c
    light cream
  • 1/4 tsp
    onion salt
  • pinch
    pepper
  • 1 dash(es)
    ground nutmeg

How to Make Blender Broccoli Soup

Step-by-Step

  1. In saucepan heat water and bouillon granules to boiling; add broccoli.
  2. Cover and simmer mixture for 3 minutes--do not drain.
  3. In blender container or food processor combine half the broccoli mixture and half the milk.
  4. Cover and blend until broccoli is very fine.
  5. Add half the cream, the onion salt, pepper and nutmeg.
  6. Cover and chill.
  7. Stir before serving.
  8. If desired garnish with sour cream and snipped chives.
