Ingredients

  • 3 - stems portabello mushroom, finely chopped
  • 1 package button mushrooms, finely chopped
  • 10 - dried mushrooms
  • 4 cups hot water
  • 4 tablespoons butter
  • 1 large onion, finely chopped
  • 1 large garlic clove, minced
  • 1 teaspoon black pepper, coarsely ground
  • 2 tablespoons beef base
  • 1 pint heavy cream
  • 3 tablespoons flour

How To Make bill's favorite mushroom soup

  • Step 1
    Soak dried mushrooms in hot water for 20 minutes.
  • Step 2
    In the mean time saute garlic and onions in butter until soft.
  • Step 3
    When soft finely chop dried mushroom.
  • Step 4
    Save mushroom water.
  • Step 5
    Add mushrooms to onion-garlic mix.
  • Step 6
    Cook for 5 minutes.
  • Step 7
    Add flour and stir until blended.
  • Step 8
    Add 1/4 cup of the mushroom water to the cooked vegetables.
  • Step 9
    Stir until blended.
  • Step 10
    Carefully pour mushroom water into soup leaving solids and about 1/2 of liquid in bowl.
  • Step 11
    There are often sand particles in this soaking water.
  • Step 12
    Dispose of this left over water.
  • Step 13
    Add pepper and beef base.
  • Step 14
    Cook at medium heat for about 5 minutes.
  • Step 15
    Add cream and heat until warm.
