best baked potato soup...ever

This is a family fave. I bake potatoes and bacon the night before and just throw everything in crockpot in morning. Serve with some crusty bread and a salad and you will the family hero!

Ingredients

  • 8 medium potatoes, baked, cut into 1/2 inch cubes. (skin on or off. i like skin on for texture)
  • 1 - onion, chopped
  • 1 quart chicken broth
  • 1/4 cup butter
  • 1 teaspoon pepper
  • 2 1/2 teaspoons salt
  • 1 cup cream
  • 1 cup shredded sharp cheddar cheese
  • 3 tablespoons chopped chives
  • 1 cup sour cream
  • 1 pound bacon, cooked and crumbled

How To Make best baked potato soup...ever

  • Step 1
    Combine first seven ingredients in a large crockpot; cover and cook on HIGH for 4 hours or LOW for 8 hours (potato should be tender).
  • Step 2
    Mash mixture until potatoes are coarsely chopped and soupy is slightly thickened. Stir in cream, cheese and chives.
  • Step 3
    Top with sour cream, sprinkle with bacon and more cheese, if desired for garnish.
