How to Make Berry Buttermilk Soup


  • 1Thaw berries, if frozen; drain.
  • 2If desired, set aside 5 or 6 berries for garnish.
  • 3In 1 1/2-quart saucepan combine berries, water, sugar, orange peel, and juice.
  • 4Bring to boiling.
  • 5Reduce heat; cover and simmer 20 minutes.
  • 6Cool 30 minutes.
  • 7Pour into blender container; cover and blend until smooth.
  • 8Stir in the buttermilk.
  • 9Cover and chill thoroughly.
  • 10If desired garnish each serving with reserved berry or thin orange slice.
