Ingredients
- 2 cups fresh or frozen blueberries or strawberries
- 1.5 cups water
- 1/2 cup sugar
- 1/2 teaspoon orange peel, finely shredded
- 2 tablespoons orange juice
- 2 cups buttermilk
How To Make berry buttermilk soup

Step 1Thaw berries, if frozen; drain.

Step 2If desired, set aside 5 or 6 berries for garnish.

Step 3In 1 1/2-quart saucepan combine berries, water, sugar, orange peel, and juice.

Step 4Bring to boiling.

Step 5Reduce heat; cover and simmer 20 minutes.

Step 6Cool 30 minutes.

Step 7Pour into blender container; cover and blend until smooth.

Step 8Stir in the buttermilk.

Step 9Cover and chill thoroughly.

Step 10If desired garnish each serving with reserved berry or thin orange slice.
