Ingredients

  • 2 cups fresh or frozen blueberries or strawberries
  • 1.5 cups water
  • 1/2 cup sugar
  • 1/2 teaspoon orange peel, finely shredded
  • 2 tablespoons orange juice
  • 2 cups buttermilk

How To Make berry buttermilk soup

  • Step 1
    Thaw berries, if frozen; drain.
  • Step 2
    If desired, set aside 5 or 6 berries for garnish.
  • Step 3
    In 1 1/2-quart saucepan combine berries, water, sugar, orange peel, and juice.
  • Step 4
    Bring to boiling.
  • Step 5
    Reduce heat; cover and simmer 20 minutes.
  • Step 6
    Cool 30 minutes.
  • Step 7
    Pour into blender container; cover and blend until smooth.
  • Step 8
    Stir in the buttermilk.
  • Step 9
    Cover and chill thoroughly.
  • Step 10
    If desired garnish each serving with reserved berry or thin orange slice.
