  • 6 large
    baking potatoes
  • 1 c
    butter, cold
  • 1 c
    all purpose flour
  • 7 c
  • 6
    green onions, sliced
  • 12 oz
    bacon,cooked & crumbled
  • 1 3/4 c
    shredded cheddar cheese
  • 8 oz
    sour cream
  • 1 tsp
  • 1 tsp

How to Make Baked Potato Soup


  1. Bake Potatoes at 400 temp for 1 hour. cool. Cut potatoes in 1/2 lenghtwise; scoop out pulp, put in bowl and mash. Set aside.
  2. Melt butter in a large pan over low heat. Whisk in
    flour until smooth. Cook 1 min. whisking constantly. Gradually whisk in milk; cook over medium heat.whisking until mixture is thickened and bubbly.
  3. Stir in mashed potatoes and green onions; bring to a boil. Cover, reduce heat, and simmer 10 min. Add bacon and remaining ingredients; stir until cheese melts. serve immediately.
