Ingredients

  • 6 large baking potatoes
  • 1 cup butter, cold
  • 1 cup all purpose flour
  • 7 cups milk
  • 6 - green onions, sliced
  • 12 ounces bacon,cooked & crumbled
  • 1 3/4 cups shredded cheddar cheese
  • 8 ounces sour cream
  • 1 teaspoon salt
  • 1 teaspoon pepper

How To Make baked potato soup

  • Step 1
    Bake Potatoes at 400 temp for 1 hour. cool. Cut potatoes in 1/2 lenghtwise; scoop out pulp, put in bowl and mash. Set aside.
  • Step 2
    Melt butter in a large pan over low heat. Whisk in flour until smooth. Cook 1 min. whisking constantly. Gradually whisk in milk; cook over medium heat.whisking until mixture is thickened and bubbly.
  • Step 3
    Stir in mashed potatoes and green onions; bring to a boil. Cover, reduce heat, and simmer 10 min. Add bacon and remaining ingredients; stir until cheese melts. serve immediately.
