Ingredients
- 1/4 cup butter or margarine
- 1/4 cup chopped onion
- 1/4 cup all-purpose flour
- 14 1/2 ounces chicken broth
- 12 ounces evaporated milk
- 2 large baking potatoes baked or microwaved
- 4 slices bacon, cooked & crumbled
- 1/2 cup cheddar cheese, shredded
- 3 tablespoons sliced green onion
- - salt & pepper to taste
How To Make baked potato soup

Step 1Melt butter or margarine in large saucepan over medium heat.

Step 2Add onion; cook, stirring occasionally, for 1 to 2 minutes or until tender.

Step 3Stir in flour.

Step 4Gradually stir in broth and evaporated milk.

Step 5Scoop potato pulp from one potato; mash. Add pulp to broth mixture.

Step 6Cook over medium heat, stirring occasionally, until mixture just comes to a boil.

Step 7Dice remaining potato skin and potato(es); add to soup. Heat through.

Step 8Season with salt and pepper. Top each serving with bacon,cheese and green onion.
