Ingredients

  • 1/4 cup butter or margarine
  • 1/4 cup chopped onion
  • 1/4 cup all-purpose flour
  • 14 1/2 ounces chicken broth
  • 12 ounces evaporated milk
  • 2 large baking potatoes baked or microwaved
  • 4 slices bacon, cooked & crumbled
  • 1/2 cup cheddar cheese, shredded
  • 3 tablespoons sliced green onion
  • - salt & pepper to taste

How To Make baked potato soup

  • Step 1
    Melt butter or margarine in large saucepan over medium heat.
  • Step 2
    Add onion; cook, stirring occasionally, for 1 to 2 minutes or until tender.
  • Step 3
    Stir in flour.
  • Step 4
    Gradually stir in broth and evaporated milk.
  • Step 5
    Scoop potato pulp from one potato; mash. Add pulp to broth mixture.
  • Step 6
    Cook over medium heat, stirring occasionally, until mixture just comes to a boil.
  • Step 7
    Dice remaining potato skin and potato(es); add to soup. Heat through.
  • Step 8
    Season with salt and pepper. Top each serving with bacon,cheese and green onion.
