Ingredients For avocado soup

  • 2 lg
    ripe avocados
  • 1 1/2 c
    creme fraiche
  • 3 c
    chicken stock
  • juice of 1/2 lime
  • 1/2 c
    fresh cilantro chopped
  • 1 tsp
    calbrian chili oil (optional)
  • salt and pepper to taste

How To Make avocado soup

  • 1
    Cut the avocado's in half and scoop out the flesh. Place in food processor with the creme fraiche and process until smooth.
  • 2
    Place the chicken stock in a pan and bring to a boil. Reduce heat and whisk in the avocado mixture. add the lime juice
  • 3
    Taste and season with salt and pepper to taste. top with cilantro and chili oil Serve immediately
