This is a seasonal soup the Anise is hard to find out of season. But this recipe is a keeper

Ingredients

  • 1 qt
    chicken stock
  • ·
    chicken base to taste
  • 2 c
    milk
  • 1 c
    diced onions
  • 1 large
    anise bulb diced
  • 3 Tbsp
    of the green leave
  • 1 tsp
    anise extract
  • ·
    roux to thicken
  • 1
    drop of green food color

How to Make Anise Soup

Step-by-Step

  1. Mix the milk & chicken stock and white pepper. Place them in a stock pot and simmer until it starts to boil. reduce the heat and add the remaining Ingredients except the roux. Add the roux a little at a time, until you reach the texture you want. Enjoy
  2. A roux is equal amounts of flour and Margarine
    cooked to remove the starch
