zuni corn chowder

I love corn soups. This one is my invention and I love the taste.

Ingredients

  • 1 tablespoon coconut oil
  • 1-1 lb. package low fat turkey bacon
  • 6 large mushrooms, sliced
  • 1 cup green onions, chopped thin
  • 8 cups chicken broth, low sodium
  • 1.5-10 oz. packages frozen corn
  • 8 dashes tabasco sauce
  • - salt and pepper to taste
  • - chopped cilantro (optional)

How To Make zuni corn chowder

  • Step 1
    In a large soup pot, heat the coconut oil.
  • Step 2
    Cut the turkey bacon into cubes and saute it in the coconut oil for a few minutes, then add the mushrooms and onion. Saute for a few more minutes.
  • Step 3
    Add the Chicken broth and the frozen corn and Tabasco sauce.
  • Step 4
    Add the salt and pepper and some cilantro if using.
  • Step 5
    Taste for seasonings, then simmer for 20 minutes. Add a bit more chopped Cilantro for garnish is you like. Serve warm.
  • Step 6
    Enjoy.
