Ingredients

  • 2 cups wild rice, cooked
  • 3 medium potatoes, washed and cubed
  • 1/2 cup onion, chopped
  • 1 quart chicken broth
  • 1 cup shredded cheddar or swiss cheese
  • 3-4 slices bacon, cooked, drained, then crumbled
  • 1 pinch parsley flakes
  • 1 stick wild asparagus, finely chopped
  • 1 pinch salt and pepper
  • 1/2 cup light cream or milk

How To Make wild rice chowder

  • Step 1
    Cook potatoes in the broth until tender, 20-30 mins. Also, cook wild rice according to the directions on the package- then set aside. Cook the bacon, drain, set aside to crumble into the soup later.
  • Step 2
    Add onion, cheese, bacon, cream or light milk. Simmer, stirring frequently until the cheese melts; soup is hot, not boiling. Add cooked Wild Rice, Season with salt and pepper if needed. Garnish with a little Parsley or Wild Asparagus- (Optional)
