Ingredients
- 2 cups wild rice, cooked
- 3 medium potatoes, washed and cubed
- 1/2 cup onion, chopped
- 1 quart chicken broth
- 1 cup shredded cheddar or swiss cheese
- 3-4 slices bacon, cooked, drained, then crumbled
- 1 pinch parsley flakes
- 1 stick wild asparagus, finely chopped
- 1 pinch salt and pepper
- 1/2 cup light cream or milk
How To Make wild rice chowder

Step 1Cook potatoes in the broth until tender, 20-30 mins. Also, cook wild rice according to the directions on the package- then set aside. Cook the bacon, drain, set aside to crumble into the soup later.

Step 2Add onion, cheese, bacon, cream or light milk. Simmer, stirring frequently until the cheese melts; soup is hot, not boiling. Add cooked Wild Rice, Season with salt and pepper if needed. Garnish with a little Parsley or Wild Asparagus- (Optional)
