Ingredients

  • 2 slices bacon, raw and diced
  • 1/2 cup onion, sweet, chopped
  • 2 cups corn, cut from cob
  • 3 tablespoons flour
  • 3 cups chicken stock
  • 2 cups potatoes, diced russets
  • 1 cup half and half
  • pinch salt
  • pinch pepper
  • 1 tablespoon parsley, fresh sprigs

How To Make sweet corn chowder

  • Step 1
    Render bacon over medium-high heat in a large sauce pan until crisp; add onions,and sweet corn and stir for approximately two minutes.
  • Step 2
    Add flour and stir for one minute; add stock and stir until smooth.
  • Step 3
    Bring to a boil, add potatoes and simmer for 15-20 minutes to desired consistency.
  • Step 4
    Add half and half,,and simmer 2 more minutes.
  • Step 5
    Season with fresh parsley, salt and pepper.
