Yes, this is a very rich soup. And it's delicious! Scallops being one of my (many) favorite types of seafood, I was excited to try this. It would be a great starter for a special meal. It's very impressive but really easy to make! The Test Kitchen

Ingredients

milk
1 c
heavy cream
2 Tbsp
butter
1 tsp
salt
1/4 tsp
white pepper
1 tsp
worcestershire sauce
1 lb
scallops, chopped into small pieces
3 Tbsp
finely chopped fresh parsley
pinch
paprika

How to Make Scallop Soup

Step-by-Step

  • 1In the top of a double boiler, blend milk, cream, butter, salt, pepper and Worcestershire sauce.
  • 2Place top of double boiler over the bottom with boiling water and bring to a simmer, stirring frequently.
  • 3Add scallops to the mixture and cook until tender, about 8 to 10 minutes.
  • 4Pour hot soup into individual bowls. Sprinkle each serving with parsley and paprika.
