quickie ham and corn chowder

This is one of my favorites to make on days when I don't really feel like cooking. I change it up a bit each time depending what I have in the fridge.

Ingredients

  • 15 ounces cream style corn
  • 15 ounces corn, canned or frozen
  • 1 tablespoon onion, minced
  • 1 1/2 cups cooked ham, chopped
  • 2 potatoes, peeled and diced
  • 2 stalks celery, diced, optional
  • 1 cup carrots, diced, optional
  • 1 cup cheddar cheese, shredded
  • 1 1/2 cups milk
  • 1 1/2 teaspoons thyme
  • 1 - green onion, sliced, for garnish

How To Make quickie ham and corn chowder

  • Step 1
    In a large saucepan, combine all of the ingredients.
  • Step 2
    Over medium heat, cook the mixture for about 15 minutes, stirring often.
  • Step 3
    Garnish with green onion and serve.
